Cajun Dirty Rice

Cajun Dirty Rice

Serves about 8

Ingredients:

1-pound ground turkey
1-pound smoked or andouille sausage (Hillshire farm works great), sliced in ½ inch rounds
1 small yellow onion, sliced
2 green onions, sliced thinly
2 teaspoons olive oil
1 bag (about 2 cups) Spice and Tea Exchange Cajun Dirty Rice Mix
3 cups water
2 teaspoons Spice and Tea Exchange Signature Spice Blend
1 teaspoon kosher salt

Set Instant pot on sauté and add olive oil and onions and let cook, stirring occasionally, for about 6 minutes until just beginning to show some color.

Add turkey and signature blend, and salt, and cook to just browning.

Add all the Cajun Dirty Rice bag (it’s just over 2 cups) and 3 cups water and stir gently.  Add sausage and hit cancel.

Place lid on cooker and press “rice”.

When done, let pressure out carefully (it will look a little too wet – but that’s ok it will absorb shortly), immediately move contents of pan into an oven proof dish.  Cover and keep warm until ready to serve, but do let rest about 10 minutes before serving to absorb excess moisture.

Garnish with sliced green onions.

Serve with corn bread and green salad.
